Recipe Description

This Kale Gratin Stuffed Squash is a hearty, flavorful dish that combines the sweetness of roasted acorn squash with the savory richness of Wood River Creamery Original Cheddar Gruyere cheese. Lacinato kale and a touch of cream bring it all together for a perfect comfort food recipe that’s satisfying yet light.

Ingredients

4 small acorn squash

2 tablespoons of olive oil

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon ground nutmeg

2 bunches of lacinato kale or Tuscan kale

16 ounces Wood River Creamery® Original Cheddar Gruyere cheese, shredded and divided (4 cups)

1 cup heavy whipping cream

Preparation

Preheat the oven to 350°F.

Cut each squash in half and remove the seeds. Brush each half with olive oil and season with salt, pepper, and nutmeg. Place the halves cut side down on a parchment-lined baking pan. Bake for 30 minutes.

While the squash is baking, remove the ribs from the kale and slice it into thin strips.

Remove the squash from the oven, turn cut side up, and sprinkle half of the shredded Wood River Creamery Original Cheddar Gruyere cheese into the squash halves. Stuff each half with about 1/2 cup of kale. Sprinkle with the remaining cheese and drizzle with 2 tablespoons of cream for each half. Season with additional salt, pepper, and nutmeg.

Return the squash to the oven and bake for another 55-60 minutes or until the squash is tender and the filling is bubbly. Serve immediately and enjoy!
