Gouda Gruyere Sausage Strata

Recipe Description

Start your morning with layers of flavor! This hearty strata combines savory pork sausage, sautéed mushrooms and onions, fresh spinach, and the cheesy goodness of Wood River Creamery Gouda Gruyere. Cubed bread soaks up a luscious egg and cream mixture, creating a golden, cheesy breakfast casserole perfect for brunches, holiday mornings, or a comforting weekend treat.

Ingredients

1 pound pork sausage meat

2 Tablespoons olive oil (or butter)

1 medium yellow onion, finely chopped

8 ounces mushrooms, stems removed and sliced

1/2 teaspoon salt

1/2 teaspoon pepper

2 garlic cloves, minced

6 large eggs

1 Cup 2% or whole milk

1 Cup heavy cream

1 Cup packed baby spinach, stems removed

1, 8-ounce block of Wood River Creamery Gouda Gruyere, shredded and divided 

8 cups cubed leftover bread (sourdough sandwich bread, soft white sandwich bread, day-old baguettes are good options)

Preparation

  1. In a large skillet over medium-high heat, sauté the sausage, breaking it up as it cooks, until browned and cooked through (about 6 to 8 minutes). Drain the fat, transfer the cooked sausage meat to a bowl, and set aside.
  2. Return the pan to the burner, add the onion, mushrooms, salt, and pepper, and cook until they soften, about 5 minutes.
  3. Add the garlic and cook until fragrant (about 30 seconds – 1 minute).
  4. Transfer the vegetables to the bowl with the sausage and cool to room temperature.
  5. While the meat and veggies cool, grease a 9" x 13" pan (or 3-quart baking dish) with butter or cooking spray and set aside.
  6. Whisk the eggs, milk, and cream until well combined in a large mixing bowl. Fold in the cooked meat and veggies, fresh spinach, about 2/3 of the shredded Wood River Creamery Gouda Gruyere cheese, and bread cubes into the mixture.
  7. Transfer the egg mixture into the prepared baking dish and top with the remaining cheese.
  8. Cover it with foil and allow the strata to rest for at least 30 minutes (up to overnight).
  9. When ready to bake, preheat the oven to 350° F. Cover the strata with tinfoil and bake for 35 minutes. Remove the tinfoil and continue to bake an additional 10-15 minutes until the strata is puffed and golden brown at the edges and set in the center (a knife inserted in the center should come out clean).
  10. Let the strata cool for 10-15 minutes before slicing and serving warm.
