Recipe Description
Spice up the harvest season with warm apple chutney on top of Gouda Gruyere cheese and crackers. They're a tasty treat on a crisp fall day!
Ingredients
2 medium Fuji apples, peeled, cored and diced
1/2 cup finely chopped red onion
1/4 cup apple cider vinegar
3 to 4 tablespoons brown sugar
1/2 teaspoon ground allspice
1/2 teaspoon grated fresh ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes
8 ounces Wood River Creamery® Gouda Gruyere cheese
24 assorted crackers
6 fresh thyme sprigs, leaves removed, optional
Preparation
Bring the apples, red onion, cider vinegar, brown sugar, allspice, ginger, cinnamon and red pepper flakes to a boil in a saucepan over medium-high heat, stirring constantly.
Reduce heat to low. Simmer, covered, for 40 minutes, stirring occasionally. Uncover; increase heat to medium. Cook and stir apple mixture until liquid is evaporated. Cool completely.
Cut Gouda Gruyere into 24 slices. Place a gouda gruyere slice on each cracker; top with chutney. Garnish with thyme leaves if desired.
